4 packages Buitoni three cheese tortellini

1 large zucchini

1/2 red pepper, chopped

1/2 sweet onion, chopped

2 Tbsp. butter

1 Tbsp. lemon olive oil

Sauce for tortellini:

2 Tbsp. butter

2 Tbsp. pesto

2 Tbsp. Parmesan cheese

Splash lemon olive oil

Saute veggies in skillet with butter and oil.

Meanwhile, cook tortellini according to directions.

Toss with sauce ingredients and serve immediately.

The beauty of this is how the veggies and tortellini are done at the same time!

I like to eat light sometimes, but with kids, I serve this with a meat.

I was feeling particularly lazy and unmotivated, so I popped some Sandra’s chicken in the oven (before starting the tortellini and veggies – since they take 38 minutes to cook!)

As far as convenience foods go, Sandra’s is one of my favorites since they are often on sale and the manufacturer’s website posts coupons ALL THE TIME!  When there is a BOGO sale, and I can use coupons, they are about $1.50 a piece!  Regular price for a box of six runs about $12.99.  They also come in boxes of two for $4.99.

The tortellini was also on BOGO sale and came out to be about $2.00 a package.

Last night we had convenience food.  Sandra’s Chicken and a gluten free mac and cheese.


Sandra’s is healthier than some of the stuff out there!


Tonight I made meatballs and polenta.  I will share the meatballs recipe later tonight.  Right now, I am treating myself to a birthday eve with Dave Matthews Band on a live webcast called “Legends on Letterman”.


They are easily my favorite live performers!  They will be in West Palm Beach on July 31 and August 1 and I already have tickets for both nights!


My local market had Sandra’s Chicken Cordon Bleu on BOGO sale.  The Sandra’s website has $1.00 off coupons per item.  I couldn’t resist giving it a try.   They are 250 calories each.  Zero trans fat.  No hormones or nitrates.  The breading is light and made from whole wheat.  As usual, sodium is the only downside.  460 mg.   Not bad for once in a while for on a night when I’m feeling unmotivated.


I served the chicken with a creamy tortellini.  Cook pasta according to package directions.  Mix together the following:

2 Tbsp. butter, cubed

3 Tbsp. cream cheese with chives

2 Tbsp. pesto

1 Tbsp. Parmesan


Blend into hot pasta and serve immediately.  I had the cream cheese on hand and the bagels were gone.  It just seemed like the thing to do!
