8 boneless, skinless chicken thighs

1 bottle S & F Caribbean Mango marinade

I’m hooked on the S & F Chef Sauce line they carry at my local market.  So many great flavors.  Sometimes I doctor them up by adding in fresh ingredients.  Sometimes not.  Straight from the bottle, with no doctoring, we loved this one!  I marinate and freeze the chicken in the sauce, and then defrost in the fridge and bake at 350 for 40 minutes.  The dijon mustard and cayenne in this sauce give it a nice kick.

3 boneless chicken breasts

1/2 bottle Fresh Market Mango Coconut Pepper sauce

1/4 c. balsamic reduction

1/4 c. pineapple juice

1 Tbsp. minced garlic

Split each breast into two pieces.

Combine sauce and remaining ingredients.

Pour a little sauce in the bottom of two 13 x 9 baking dishes.

Place chicken in dishes.

Pour remaining sauce over chicken pieces.

Bake at 350 F for 40 minutes or until internal temperature is 165 F.

Cut up chicken into bite size pieces and serve with rice and veggies.  We had Jasmine brown rice and green beans stir fried with cashews.

The sauce straight from the bottle was a little too hot for my liking.  All I could taste was the heat.  I cooled it down with the balsamic reduction, juice, and garlic.   It was really yummy!

Another sale led me to this meal.  The meatballs were a steal!  I wanted some more sauce than they come with, though, and when I saw the Mrs. Renfro’s on sale too, it was meant to be!

I heated up the meatballs and salsa in a large skillet with a lid over medium low for about 45 minutes, while I cooked some brown rice.  I steamed a package of broccoli slaw and mixed it with the cooked brown rice.  We also had a nice salad of mixed greens to cool things down, and a dollop of sour cream helped too.  This is a very spicy, but very delicious combination.  I will try this again (from scratch next time) now that I know the kids like the combination.
