1 pork shoulder roast

1 packet fajita seasoning mix

There’s nothing easier than pulled pork in the crock pot!  I wanted to season it with a Mexican flair as I planned to serve it over rice with tostones (I had some in the freezer that I’ve been meaning to cook up).

Rub roast with seasoning mix.

Place in crockpot and cook on low 8-10 hours.   Shred.  Add in seasoned bread crumbs to thicken juices, if needed.

Kerry's Captiva Make Your Own Fajitas

1 can seasoned black beans
3 c. cooked rice (we used Jasmine)
1 container fresh salsa
1 package Southwest styled cooked chicken strips
1 package finely shredded Mexican cheese
1 c. sour cream
1 tsp. olive oil or cooking spray

Heat rice, beans, chicken and tortillas.

Layer with the ingredients of your choosing!

Yumm.

I called these ‘Kerry’s Captiva Make Your Own Fajitas’ because they were her contribution to cooking the first night of our vacation in Captiva!
