I saw some of these at Target (Archer Farms brand) already prepared and was inspired to make some!

6 boneless, skinless chicken breasts

8 oz. cream cheese

1 Tbsp. chopped jalapenos

12 slices bacon

1 Tbsp. Adobo seasoning

Combine cream cheese and jalapenos.

Place spoonful on each chicken breast.

Fold over edges of chicken.

Wrap in bacon.

Place on baking sheet  sprayed with cooking spray and season with Adobo seasoning.


Bake 400 F for 45 minutes until bacon is crispy.


We had it with tortellini and sliced baby tomatoes from Trader Joe’s.



So yummy when you cut into it!


12 chicken cutlets

8 oz. neufchatel cheese, softened

8 oz fresh mushrooms

2 Tbsp. butter

3 Tbsp. Parmesan cheese

2 Tbsp. pesto sauce

1 jar pasta sauce or 2 c. homemade

Cook mushrooms in butter.  Salt if desired.

Mix neufchatel cheese, Parmesian and pesto.  Stir in mushrooms.


Pour half jar (or 1 cup) pasta sauce in bottom of 13 x 9 baking dish.  Sprinkle with a little Parmesan.


Pound chicken cutlets until 1/8″ thick.


Divide cheese mixture into 12 equal portions.

Place cheese mixture on chicken cutlets and roll.


Place chicken into dish with pasta sauce.


Top with remaining sauce.

Sprinkle with a little Parmesan.


Bake at 350 F for 40 minutes.

Sprinkle with shredded cheese, if desired.


Continue to heat until cheese is melted.

Gluten Free Baked Blueberry Cream Cheese Stuffed French Toast

20 slices Gluten Free Cinnamon Raisin Bread
1 pint blueberries
2 blocks cream cheese, softened
1/2 c. sugar
12 eggs beaten
2 c. milk

Spray two 13 x 9 baking dishes.

Mix together cream cheese and sugar until creamy.

Spread every piece of bread with cream cheese mixture on one side.


Place 10 slices in baking dishes. Place blueberries on top.


Place remaining slices cream cheese side down making sandwiches.

Mix eggs and milk. Pour over making sure bread is coated with egg mixture. Turn them over a few times if need be.

Bake at 350 F for 30 minutes.  Serve with butter and syrup!
