1 package Trader Joe’s Stone Ground White Grits


2 c. water

1 tsp. salt

Bring water to a boil.  Gradually add in grits.

Return to a boil.  Turn down as low as you can and cover.  Stir frequently.  Cook 15 to 20 minutes.

Add in 8 oz. neufchatel cheese, cubed.

Cook and stir 10 more minutes.

I served meatballs in a marinara sauce.  This could be a make your own meal by having people use up leftovers of any stew, chili, meat, or vegetable served over the grits.
