1 box gluten free cornbread mix (I used Kentucky Kernel brand)

1 can white corn kernels, drained

1 container sour cream

1/2 c. vanilla milk (I used coconut almond)

1 Tbsp. agave syrup

Combine ingredients and bake at 375 for 25 minutes or until golden brown.

Meanwhile combine the following:

4 c. leftover pulled pork

1 jar salsa

Spread over baked cornbread.

Top with shredded cheese and bake another 15 minutes.

We had this with sliced avocado, sour cream and tostadas


with freshly made pica de gallo.

This was a huge hit!


Make Ahead Breakfast Casserole

10 eggs
1/4 c. milk
salt and pepper
1 package O’Brien Potatoes
1 lb. center cut bacon
1 can cream style corn
8 oz. sliced cheese (I used colby jack)

Cook bacon until crisp.
Pour bacon grease into container to save for future recipes, leaving a few tablespoons in skillet.

Cook potatoes in reserved bacon grease. Add a little olive oil, if needed. Salt and pepper.
Remove potatoes from skillet and set aside.

Soft scramble eggs mixed with milk in skillet. When done, mix in creamed corn.
Spray crock pot with butter flavored spray. Place half of egg mixture in bottom. Top with cooked potatoes. Crumble bacon over potatoes. Top with remaining egg mixture. Place sliced cheese over top.
At this point, you can put the crock pot on low and keep it warm for up to 4 hours, or refrigerate it if you make it the night before.



I am an devout Dave Matthews fan and go to see his band every year when they are in my area.  If you see him once live, you too will be hooked!  This song’s been running through my mind all night tonight, while I help a friend with some bookkeeping.  No cooking for me tonight.  The kids threw themselves together some tacos with already cooked ground meat I keep in the freezer.

I though I would share Dave Matthews ‘recipe’ for Cornbread! Be warned, it’s a little bit raunchy, but fun!  Totally worth a view!  Makes me want to run around . . . 🙂  It soars inside my soul!

It’s Dave, sans band, with an amazing guitarist named Tim Reynolds.  They performed this live at Farm Aid this past September.

Corndog Casserole

1 package Bob’s Red Mill Gluten Free Cornbread Mix
1 can creamed corn
1 can corn kernels (drained)
1 c. sour cream
1 c. milk
2 eggs
1/3 c. oil
1 c. shredded cheese
3 packs hot dogs

Mix all ingredients except hot dogs and shredded cheese. Blend completely, making sure no lumps of mix remain. Cut hot dogs into 1 inch pieces. Stir in.

Pour into 13 x 9 pan.

Bake 375 F for 40 minutes until toothpick comes out clean.
Top with shredded cheese and broil until golden.

The kids loved this and ate with ketchup, mustard, honey mustard, and barbecue sauce for dipping!
