The pizza on the left contains normal Italian cheese.  The one on the right has cheese alternative.

I head cauliflower

1 1/2 c. Italian cheese (or cheese alternative)

2 Tbsp. pesto

2 eggs

Place cauliflower florets in food processer.  Process until the consistency of rice (or a little smaller).


Microwave for 8 minutes.  I sauteed mine in a skillet in palm oil.



Mix cauliflower, cheese, pesto and eggs.

Spread onto cookie sheet lined with foil and sprayed with coconut oil spray.

Bake at 450 for 15 minutes.

Top with pasta sauce, topping and cheese just like pizza.  Bake 10 minutes more.


We used leftover sauce from meatball night, alternative cheese and pepperoni.  It was delicious.  It did fall apart, but we gladly ate it with a fork!
