3-4 lb. pork roast

2 Tbsp. coriander

2 Tbsp. cumin

2 tsp. salt

1 tsp. pepper

2 tsp. ginger

1 Tbsp. minced garlic

1 large onion, coarsely chopped

1/2 can coconut milk

Lime wedges for garnish

Mix together coriander, cumin, salt, pepper, and ginger.  Rub the seasonings all over the roast.  Refrigerate 30 minutes to overnight.

Place meat in the slow cooker and surround with onions and garlic, and 1/2 can coconut milk.

Cook on low 8 to 10 hours.

My mom, Grace, had a few go to recipes that I got from my niece Cindi during a recent visit back home. Yesterday’s chicken was one. This is the other:

8 chops
salt and pepper and/or other seasoning (I used a barbecue spice mix) Next time, I would use more!
16 oz. Sour Cream (I’m a believer in Daisy – definitely my favorite) – I bet it would be good with onion soup mix in it too!
Crushed Corn Flakes (I bought a box – ready to go)

Season pork chops.

Coat both sides with sour cream
and then crumbs.
Place on cookie sheet.
Bake 275 for 45 minutes.
