Okay, I confess, I didn’t set out to make a deconstructed rice bowl.  If I’d thought of that, I would have hard-boiled some eggs and served it in a bowl.  Next time!  And there will be a next time.  This dinner was yummy.

Sausage, Brown Rice, Roasted Veggies, and Salad

6 Cups cooked brown rice.  I always use a rice cooker and season with a salt blend and a spoon of duck fat (purchased at my local market).

1 Medium onion, chopped roughly.

2 lb. smoked sausage (I used smoked turkey sausage)  Lots of possibilities here!

1 yellow squash and 1 zucchini, sliced 1/2 inch thick and tossed with olive oil and salt or other seasoning blend.   I used Italian, but rosemary and thyme would be good.

2 ob. baby portobello mushrooms, cut in half, and tossed with olive oil and salt or other seasoning blend.  I used onion salt and a pepper blend.

1 can beans of choice, drained and rinsed.  I used cannellini beans.

This meal is so versatile, you can season and imitate different international cuisines.  Use garam marsala, or five spice, curry, or coriander with lime zest, etc.  You get the idea.  Take it whatever flavor direction you want.

I served this with Banh Mi veggies I always keep on hand, and it was a huge hit.  I also put together a salad kit.

First cut up the veggies and toss with oil and seasonings.  Tasting it raw is the only what to make sure it’s not underseasoned.

Put rice in rice cooker next, as it will take longer than the rest of the foods.

Heat olive oil in skillet and cook onions over low 5-10 minutes, while you cut the sausage into semicircles.

Once the onion is softened, put sausage in on top of it and put on a lid.  It will take about the same amount of time as the rice for this to caramelize nicely.

Put the squash and mushrooms on a baking sheet and bake at 400F for 15-20 minutes, or until tender.

When the rice is nearly done, and just a little liquid remains in the bottom, unplug and stir in beans.  Place lid back on to keep warm while squash and mushrooms finishes.

I really wish I’d thought of the rice bowl angle earlier.  A nice egg on top would have been the bomb!

General Tso Chicken

Still on my Asian kick. Tonight’s super easy dinner was also yummy!  Boneless chicken breast baked in General Tso sauce while veggies cooked on the stovetop and rice cooked in the rice cooker.

For the sauce (most jarred sauce have tomatoes so are a no-no for me):

2 Tbsp. oil

6 Tbsp. minced garlic

1/4 c. minced ginger

1 c. sugar

3/4 c. soy sauce

1/2 c. rice wine vinegar

1/2 chicken stock

Cook garlic and ginger until fragrant.  Add in remaining ingredients and simmer over low heat until slightly thickened.  Pour over boneless chicken breasts and refrigerate up to 24 hours.

Bake 350F 40- 45 minutes meanwhile cooking rice and sauteeing stir fry vegetables.  I used chop salad, my go to for stir fry.

When chicken is done, cut into bite size pieces and toss in sauce.  Add rice to sauteed stir fry.  Serve chicken over rice.

 

 

Tonight’s dinner was a hit.  Easy as can be too.  Using the sauce the chicken was cooked in to flavor the rice noodles and spinach was yummy, and the addition of Kimchi gave it a nice kick!  I can’t wait to try variations on this – adding in green onions and other veggies.  This would be good with shrimp or tofu too.  There are as many possibilities as there are Asian sauces!  Topping it with a soft yolk egg would be good too!

8 boneless skinless chicken thighs (marinated in Asian sauce – I used McCormick Sesame Chicken Skillet Stir Fry Sauce)

2 packs Thai Kitchen thin rice noodles – we love these and will buy them again!

1 bag fresh spinach

Kimchi for topping – we love Wild Brine brand!

Bake chicken at 350F for 45 minutes.

Meanwhile, make rice noodles according to package directions, adding in spinach with noodles.

Cut chicken into bite size pieces and toss with cooked noodles and spinach.

Top with Kimchi.

2 lb. chicken tenderloins

2 packages Sunbird Bourbon Chicken Mix

2 Tbsp. soy sauce

1 1/2 c. water

1/4 c. honey

2 Tbsp. grated fresh ginger

2 Tbsp. minced garlic

1 tsp. red pepper flakes

1 package Eat Smart Stir Fry vegetables

1 can baby corn, drained

1 can sliced water chestnuts, drained

2 Tbsp. walnut oil

Cut up tenderloins into bite size pieces.

Toss in bourbon chicken mix.

Heat oil in dutch oven.  Cook chicken about 10 minutes over medium high heat.

Add water, honey, ginger, garlic, red pepper flakes, and stir fry vegatables.

Over and simmer 15-20 minutes until chicken is cooked through.  Internal temperature should be 165 F.

Stir in baby corn and water chestnuts.

Add panko bread crumbs to thicken, if needed.  I added about 1/4 c.

I cooked rice in the rice cooker to serve this with.

1 lb. ground pork

1 packet SunBird Hot and Spicy Szechwan Seasoning

1 package Sidari’s fresh angel hair pasta (part of the Fresh Market little big meal)

3 Tbsp. soy sauce

2 Tbsp. honey

1/4 c. each chopped onion, red pepper, green pepper, yellow pepper, and orange pepper

1/3 c. water

1/3 c. crunchy peanut butter

1/2 packet Dole Chopped Salad (kale, cabbage, chard, brussel sprouts, etc.)

1/4 c. oil (I used pistachio but sesame oil or any other nut oil works)

1/2 bottle Honey Ginger Miso salad dressing

Sesame seeds, chopped cashews, and sliced green onions for garnish

Heat water to cook pasta.

Brown pork in skillet with nut oil.

Mix seasoning packet, soy sauce, honey, water, and peanut butter.  Mix well with immersion blender.  Set aside.  Reserve 1/4 c. sauce for meat.

Cook noodles according to package directions – only 1 to 1 1/2 minutes.

Drain.  Combine with sauce, chopped salad, and dressing.  Top with seeds, cashews and green onions.  Set aside to cool.

Once pork is cooked through, add in copped veggies.  Cover and steam until veggies are tender, but not mushy.  Add reserved peanut sauce.  Spice up meat mixture with red pepper flakes to taste.

Serve meat over noodles.

Yum!!

 

I love, love, love these noodles.  Even after they are refrigerated, they stay tender, making them perfect for this dish!!

1 large pork roast, rubbed with seasonings of choice

I used:

  • 2 teaspoons freshly ground black peppercorns
  • 2 teaspoons yellow mustard seeds
  • 1 teaspoon ground cumin
  • 3 tablespoons paprika
  • 2 tablespoons brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper

Place spinach, chard or other greens in bottom of large crock pot.  Chop onion and carrots and place on top of greens.  Pour 1/4 bottle Trader Joe’s Spicy Peanut Vinaigrette over veggies.  (you may want to add some red pepper flakes, as the “spicy” is overstated.  Still delicious though and smells wonderful while it’s cooking).

Place roast on top of veggies.  Cook on low 8-10 hours.  Shred and add the rest of the dressing in and cook on high for 30 minutes.

Cook udon noodles according to directions.  Toss with shredded pork.

I served this with some leftover butternut and acorn squash and a broccoli slaw.

3 boneless chicken breasts, split

1/4 bottle Ken’s Steak House Lite Asian Sesame Dressing (with Ginger and Soy)

1/4 bottle Terrapin Farms Miso Ginger Honey Dressing

I didn’t have enough of either dressing, so I mixed them, and the result was YUM YUM YUMMY!!

Place chicken breasts in baking dish.  Toss with dressings mixed together.

Bake 350 F for 40 minutes.

I served this with couscous mixed with chop salad.

8 c. cooked meatballs

1/2 bottle Trader Joe’s Gyoza Dipping Sauce

4 c. organic chicken broth

1 package Eat Smart stir fry vegetables.

Bring broth and rice to a boil.  Cover with tight lid and lower heat.  Cook 50 minutes.

Meanwhile, place frozen meatballs into deep skillet and heat with 1/2 c. water over medium heat.  Add in Gyoza sauce and stir around.  Lower heat, cover, and warm through.

In another skillet, meanwhile, stir fry veggies right before serving.

This was so easy for a lazy day!

3 lb. boneless skinless chicken breast (bought at Fresh Market’s Tuesday sale!)

1/3 bottle Trader Joe’s Yellow Thai Curry Sauce

Toss breasts with sauce.

Bake at 300 F for 45-50 minutes while rice cooks.

Cook rice according to directions.  I used equal parts chicken broth and water instead of just plain water.

The rice needs to sit for 10 minutes at the end.  Meanwhile, I cut up the chicken into bite size pieces and returned the dish to the oven on warm.  I stir fried the veggies.  Everything got done at the same time!  Yummmmmmmmm.
