Coconut Curry Meatballs

Homemade turkey meatballs in the freezer is always a good thing.  Fresh Market’s little big meal sauces are a great opportunity to try new products.   Tonight I tried Imagine Thai Coconut Curry Sauce.  It was a hit!!

40-50 small homemade meatballs (ours were turkey)

2 pouches Imagine Thai Coconut Curry Simmering Sauce

Thai Coconut Curry

1/2 c. each chopped onion, green onion, green and red pepper

2 Tbsp. minced garlic

8 oz. chopped mushrooms

1/2 c. chopped parsley

2 tsp. Mango Marsala Curry Salt

2 tsp. Iron Chef Shanghai Seasoning

Stir fry the veggies in a little olive oil.  Season to taste.

Heat meatballs in sauce.

Cook rice in rice cooker.

Voila!  A simple delish meal!
