For filling:

Brown 2 lbs. ground meat and 1 c. chopped onions in olive oil.  Drain and set aside.

Combine with 2 c. cooked rice, 1 canned diced tomatoes, and 1 can black beans, drained.

Bake peppers in 450 F oven with water on baking trays until tender, about 10 minutes.

Remove from oven and fill with filling.

Top with shredded cheddar.

Bake 350 F for 25-30 minutes.
