1/2 large head cabbage, chopped

3 c. cooked rice (I used Minute Rice Brown Rice)

1 package frozen seasoning vegetables mix (onions, pepper, parsley, celery)

1 can diced tomatoes

1 jar marinara sauce

1 package shredded cheese (I used alternative cheese product)

2-3 lb. ground meat (I used turkey)

1 Tbsp. salt

1 Tbsp. steak seasoning

My daughter Andyy said she was in the mood for cabbage rolls.  A search on the internet for an easy fun recipe to try yielded a deconstructed casserole from kalynskitchen.com.

Brown the ground meat in a little oil.

Crumble and remove from pan. In the same pan, cook seasoning vegetables.

Add in seasonings, tomatoes and marinara.

Simmer for a few minutes and add ground meat.

Simmer until thickened – about 15 minutes.

Stir in rice.

In a separate pan, cook chopped cabbage until softened.

Prepare a 13 x 9 baking dish by spraying with coconut oil spray.

Layer cabbage.

Top with meat/tomato/rice mixture.

Top with meat/tomato/rice mixture.

Cover tightly with foil and bake at 350 for 40 minutes.

Remove foil.  Sprinkle with cheese.  Bake 20 minutes more.
