2 bags Celebrations blend potatoes

2 Tbsp. minced garlic

1 tsp. salt

1/4 c. olive oil

1 tsp. smoked paprika

1 tsp. salt

1/2 tsp. freshly ground pepper

3 Tbsp. Parmesan cheese

Boil potatoes with garlic and 1 tsp salt in the water until tender.  Drain, reserving garlic in a strainer.

Place in a bowl with remaining ingredients except Parmesan.

Toss to coat.

Place on jelly roll pan sprayed with cooking spray using a slotted spoon.  Mash with potato masher.


Drizzle with olive oil mixture it was tossed in.  Sprinkle with Parmesan.

Bake at 425 F for 10 minutes until crispy.

Serve with Irish butter and sour cream, if desired.
