2 1/2 large boneless, skinless chicken breasts, split

4 Tbsp. olive oil

3 Tbsp. Cajun seasoning

1 C. Greek vinaigrette dressing

1/2 C. white wine

Season breasts on both sides with Cajun seasoning.  Heat oil in two skillets and brown chicken on both sides.

Mix dressing and wine.  Pour over chicken.

Cover and simmer 20 minutes or until internal temperature is 165 F.

The chicken was delicious and juicy.  I used two pieces to stretch out some chicken salad I bought today, and served the other three pieces chopped up with Rice A Roni (I know) cooked using half the seasonings it comes with and adding in grated carrots and a can of black beans.

The meal was a hit!  I see a future of endless variations!
