1 bag Potato Inspirations Celebration Blend

1 bag frozen chicken tenders

1 jar pasta sauce

2 c. shredded 6 Italian cheese

2 Tbsp. olive oil

3 Tbsp. butter

Salt and pepper


Cut potatoes in quarters and boil until tender.  I did this a day ahead.  I had bought the potatoes on a BOGO, so I cooked two bags and froze the one of the bags after boiling for a future recipe.

Cook chicken tenders according to package directions.

Meanwhile, put olive oil and butter in a skillet and brown potatoes over medium high heat.


Spray a lasagne pan with cooking spray.

Line bottom with potatoes.

Layer chicken over potatoes.


Pour sauce over it all.


Sprinkle with cheese.


Bake 350 for 20-25 minutes.


This was a huge hit.  Only one small portion left for someone’s lunch tomorrow (or midnight snack!)
