Shepherd's Pie (using leftover meatloaf)

4 c. leftover meatloaf, chopped into bitesize pieces
2 c. gravy (I used low sodium canned)
1 large bag frozen mixed veggies
8 c. mashed potatoes (I opted for the ready made ones that were on sale)

Combine meatloaf and veggies and gravy.
Top with mashed potatoes.
Bake 350 F for 40 minutes until heated through.

Obviously, using homemade ingredients would have amped it up, but it was still good and easy and the leftover meatloaf didn’t go to waste!
