Italian Sausage and Veggies over Rice

3 lb. hot Italian sausage
1 bag frozen seasoning vegetables (onion, peppers, parsley)
1 bag Smart Start stir fry vegetables
1 jar tomato basil spaghetti sauce
2 c. shredded colby jack cheese

Brown sausage in a large skillet. Chop up into bite size pieces. Drain well and set aside. Cook seasoning vegetables in sausage drippings until carmelized. Drain well on paper towels.

Cook stir fry vegetables in microwave.

Combine meat and vegetables. Mix in sauce and pour into a greased lasagne pan.

Top with shredded cheese and bake at 325 for 35 minutes.

I served this over rice. It was a huge hit!
