Gluten Free Sloppy Joe Cornbread Casserole

1 box gluten free cornbread mix
1 can creamed corn
1 can corn kernels, drained
8 oz. sour cream
3 eggs
1/2 c. oil
2-3 lbs. cooked ground meat (I used beef and turkey)
2 cans Manwich sauce

Combine wet ingredients for cornbread. Sift in mix and blend.
Set aside.

Brown ground meat in skillet.

Drain thoroughly. Return to skillet and heat with sauce.

Pour hot meat into 13 x 9 baking dish. Top with cornbread.

Bake 350 F for 35 to 40 minutes.


I used Kentucky Kernel Sweet Gluten Free Cornbread Mix. Much more reasonably priced than other brands and you can’t tell it’s gluten free. We like it.
