Gluten Free Chicken Nuggets

The key to making this easier, I laid everything out ahead

1 1/3 c. gluten free flour (I used Kentucky Kernel seasoned)
1 1/3 c. water
Combine in one bowl

1 tsp. baking soda
2 Tbsp. vinegar

Mix in a separate bowl – so cool – it bubbles!

Mix the vinegar and soda into the flour and water.

Dunk the chicken in it and then fry in oil. Drain on paper towels.
If you don’t have seasoned flour, be sure to add in salt and pepper, of course. Kentucky Kernel has a little heat to it. The package says “natural spices” but it tastes like it might have cayenne.

I used 4 large boneless, skinless chicken breasts, cut into pieces

peanut oil and vegetable oil for frying
