Gluten Free Pasta Fagioli (using leftovers)

2 lb. low sodium smoked sausage (any ground or chopped meat will do – even leftover pork chops or chicken that you’ve chopped)
1 can garbanzo beans
1 can great northern beans
1 large tomato, rough chopped
1 qt. chicken broth
2 Tbsp. pesto
2 Tbsp. dehydrated onion
1 Tbsp. garlic salt
1/2 tsp. red pepper flakes
1 tsp. cajun seasoning

1/8 c. wine or sherry
olive oil blend to brown the sausage
1 large tupperware leftover gluten free pasta with carbonara sauce (about 2 cups)

Slice and brown sausage in oil.


Add pesto and seasonings. Cook for about a minute.


Add in chopped tomatoes


and 1/2 c. broth and drained beans. Bring to boil and turn down heat and simmer until liquid is almost gone, mashing the beans up a little bit to make it creamier. Add in remaining broth and sherry and bring to boil again.


Add in leftover noodles and sauce (I chopped mine up a little bit). If you have no leftovers to use up, cook 1 lb. gluten free pasta for one minute less than directions call for. Small size pieces works best.  Drain pasta and add into soup mixture.

Simmer for 20 to 30 minutes depending on how hungry you are and how long you can wait.

A great secret for soups and stews I learned recently – right before serving, add in a splash of fruit infused balsamic vinegar (I used fig) and some finely chopped nuts (I used walnuts), and a small sprinkle of dried Italian seasoning.  These are optional add-ins and it certainly tastes wonderful without!  It just gives it a freshness we like.

Beware, this was so tasty, I couldn’t wait and burnt the roof of my mouth!

Optional toppings:
Shredded cheese
Sour cream
Green onion slices
Fresh chopped onion and/or red peppers

Finely chopped pepperoni or bacon bits if you aren’t watching what you eat!

Easily converts to vegetarian – simply eliminate the meat, add in tofu or veggie sausage or hot dogs, and use vegetable broth!

This can also be cooked in the crockpot by simply dumping everything in.  I just experimented and did it in a skillet since the kids asked for it, and I ran out of time this morning and didn’t get the crockpot put on!
