Aunt Harriet's Old Fashioned Oatmeal Cookies

I finally got this recipe from my cousin Barbara!  Her mother, Harriet, used to make these when I was little.  I hadn’t had them for 35 years.  They were as good as I remember!  The kids liked the dense, cakey texture.   I used the small ice cream scoop Molly uses for mini cupcakes and it made about 30 cookies.  Keep them on the counter in a lock lid container. Don’t refrigerate (it ruins the texture of them).

Aunt Harriet’s Old-Fashioned Oatmeal Cookies

2              C. flour                                                   2              C. quick cooking oats

1              tsp. baking soda                                   1              C. shortening

1              tsp. salt                                                   1/2         C. brown sugar

1 ½         tsp. Cinnamon                                        1/2         C. granulated sugar

2              Eggs                                                          1/3         C. milk

1              tsp. vanilla

Raisins (Optional)

Sift together flour, baking soda, salt and cinnamon.  Add oats, shortening, sugars, eggs, milk and vanilla.

Beat until blended.  Stir in raisins (optional).  Chopped apple is also good!

Drop by tablespoonfuls on parchment lined cookie sheet.

375° oven 10-12 minutes until golden.
